Pound Cake

This is a really tasty pound cake.  We have a chocolate fountain that my husband sets up frequently for work functions.  He likes me to make this to go with it.

Ingredients:

  • 3 cups sugar
  • 8 oz butter
  • 7 eggs
  • 3 cups cake flour
  • 1 cup whipping cream
  • 2 tsp vanilla

Take out the eggs and butter and let them get to room temperature (about 1 hour).  In a mixing bowl, cream the butter and sugar.

Add the eggs, mixing after each one.  Sift the flour and add to the bowl.  Add the vanilla and cream and mix.

Pour the batter into a long loaf pan or tube pan.  My pan is 13 x 4 x 4.

Place in a cold oven then turn temperature to 350°.  Bake for 80-90 minutes.  It may need to be covered with foil the last 20 minutes or so to prevent over-browning.

I like baking this in a Pullman loaf pan that has a lid.  The first loaf (back) I left the lid off for about 70 minutes then put it on the last 20 minutes.

The second loaf (front) I started with the lid on, baked it for about 70 minutes, then took the lid off.  It didn’t brown as quickly as I thought it would so I will probably take the lid off after 60 minutes next time.

Personally I liked the appearance of the second cake better, it cooked faster, and didn’t split near as much.

Chicken Barley Chili

This is a flavorful recipe that is so easy to make.  I think I might even leave out the chicken next time.

Ingredients:

  • 3 cups cubed and cooked chicken
  • 14.5 oz can diced tomatoes
  • 15 oz can black beans, drained and rinsed
  • 15 oz can corn, drained
  • 16 oz jar salsa (I used mild)
  • 1 cup Quaker pearl barley
  • 5 cups water
  • 2 chicken bullion cubes
  • 1 tbs chili powder
  • 1 tsp cumin

Combine all the ingredients in a large sauce pan.  Simmer for about 1 hour.  You can substitute 1 can of broth for the bullion cubes if you reduce the water.

Serve with cheese and crackers if desired.

Steak Seasoning

This seasoning is a family favorite.  My son wanted to cook for the family and asked me to find a seasoning.  This is what I stumbled across.

Ingredients:

  • 2 tbs 2 tsp salt
  • 1 tbs 1 tsp salt
  • 2 tsp pepper
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp cayenne
  • 1/2 tsp coriander
  • 1/2 tsp turmeric

Combine all the ingredients.  I like to blend it a few seconds in a coffee grinder.

It’s very easy to adjust this to your personal taste.
