Strawberry Ice Cream

The fresh strawberries in this recipe give it such a nice flavor.  It is very easy to make and doesn’t require any cooking.  Yield is about 2 quarts.

  • 3 cups fresh strawberries, stemmed and sliced
  • 4 tbs lemon juice
  • 1 1/2 cups sugar
  • 1 1/2 cups whole milk
  • 2 3/4 cups heavy cream
  • 1 1/2 tsp vanilla extract

Combine strawberries, lemon juice, and 1/2 cup of the sugar.  Stir and allow the strawberries to macerate for a couple hours.

Pour the strawberry mixture into a food processor and chop.  I like to leave a few strawberry pieces, but you can puree it if you prefer.

Combine the remaining 1 cup of sugar, milk, cream, and vanilla.  Stir well.

Add strawberries and stir.

Pour into ice cream maker.

Freeze according to your machine.  Mine took about 20 minutes.  Pour into container and put in freezer to harden.
